Aromas of wet stone and lime, with bracing acidity but you will embrace it just as it embraces you and all your senses. Liquid gorgeous. Cave Spring reigns when it comes to all styles of Niagara Riesling. Sublime and divine. Pair with fresh white fish.

Another splendid Riesling from Cave Spring. Slightly off-dry with some racy acidity as you would expect from Niagara. Love the apple, citrus, wet stone, blossoms and honey symphony. A slight effervescence dances in the mouth. Light and delicate. Highly recommend.

This Niagara Riesling is showing milder than typical aromas while the falvours have a bit more burst. Key notes that stood out include lemon-lime zest, candied orange peel, honey and stone fruit. This is fair expression of Ontario Riesling, however I find it lacking balance and complexity. Enjoy this light bodied wine with patio nibblities like fresh (creamy) cheeses or goat cheese. Tasted May 2016.
