Trius Winery at Hillebrand Oliveira Vineyard Showcase Wild Ferment Chardonnay 2007, V.Q.A. Beamsville, Ontario, Canada: The winemaker Darryl Brooter put the entire vineyard through a 'wild' fermentation in French Oak barrels. After filling the barrels right to the top, he placed in the solid bung and let the wild yeast 'do their thing'. He decided not to put the wine through malolactic fermentation as the vineyard has amazing minerality which is the true character of the wine. This would be masked by MLF and he believes the true vineyard character needs to be seen. Exotic aromas of hazelnut, ripe peach and apricot with stunning mineral depths and a long finish.
