Pierre Laplace Madiran Tannat 2005, AC Estate Btld, Midi, France: A rustic, honkin’ big red with delicious aromas of black cherry, cedar, and bacon fat. The Tannat grape is famously tannic, thus its name, but the Laplace winemaking brothers use the technique of micro-oxygenation that introduces tiny amounts of oxygen into the wine as it ferments to soften the tannic edges.
