Nederburg Sauvignon Blanc 2007, South Africa: The grapes were sourced from vineyards growing in the Durbanville, Stellenbosch, Paarl and Darling areas. Planted between 1980 and 1999, these vineyards grow in Clovelly, Hutton, Tukulu and Oakleaf soils. The grapes were harvested by hand and machine, balling from February to March. They were crushed and then cool-fermented in temperature-controlled stainless steel tanks for two or three weeks at 13 degrees Celcius, with a small portion of the grapes receiving skin contact for 4-6 hours.
