Dan Akroyd Vidal Icewine Signature Reserve 2005, Niagara, Ontario, Canada: The frozen vidal grapes were harvested early in December 2005 after temperatures fell. After settling of the juice, cool fermentation was completed in mid-February when the wine was placed outdoors to stop fermentation. The wine was then transfered into small French oak barrels where it aged for a period of 12 months.
