I recently heard someone say "Nothing pairs better with a good clean cut of beef than a Cabernet Sauvignon". And that's what I enjoyed with this wine, a steak. Classic, I know. Steak and Cabernet Sauvignon, but this was a great match. This is a bold Cabernet with great structure, hardy fruits, a hint of cocoa and well integrated oak.
Douglas McMillan rated this wine as
90/100 with the following review:
Complex, with lots of subtle aromas, with plum, violets, earthiness, minerality, spices, and cherry candy, but nothing that hits you over the head. The taste is dark fruit and bright acidity with lots of fine tannins. This wine will age nicely for 5+ years. Enjoyable now with tender, rare red meat.
Matt Steeves rated this wine as
89/100 with the following review:
Raspberry, blueberry, vanilla, stewed fruits on the nose. Layers of dark berries, stewed fruit, raspberry preserves, and vanilla on the palate. High tannins that coat your mouth and a rich acidity that make this a great wine to enjoy with rare cuts of grilled beef. Drink 2014-2020. Decant one hour prior to serving. Tasted November 2014. 89 points. Matt Steeves - www.nataliemaclean.com
Astrid Young rated this wine as
91/100 with the following review:
nice black fruits up front with sweet French and American oak lending a hand. Typical cab character comes up on the swirl, showing printers ink and forest floor character very common to Sonoma. Soft at first, but reins in with bright fresh mountain fruit acidity, a good, solid cab with an elegant style, finishing with enough bold fruit to hold you over til the next sip.

Nov 16, 2014: Medium ruby, with currant, green herb, spice and dusty mineral which tend towards savoury. Dusty and savoury on the palate with repeating flavours from the nose. Medium body, nice seam of acidity along with fine drying tannins. This should be nice to follow over the next 5-7 years. I'd try this alongside thyme/rosemary crusted roast beef or tenderloin. 88+

Chateau St. Jean Cabernet Sauvignon 2011, Sonoma County, California, United States: Balanced, complex and distinguished: this full-bodied Californian Cabernet hails from the cool climate of Sonoma. The dramatic difference in day and nighttime temperatures (diurnal) makes for ripe wines that have underlying balance. Finishes with cassis, smoke, anise and dried tobacco. Drink: 2014-2018. 977173 13.80% XD 750 mL $65.00 Score: 92/100. November 15, 2014 Top Rated Red Wine. Best Beef Wine Full Review
