The Edelschuh vineyard epitomizes the notion that with great effort comes great rewards. With an altitude of 570 metres above sea level and a average inclination of 85 degrees you can only imagine how difficult it is to harvest this mixture of red, blue, and black slate vineyard. The reward is this incredible Sauvignon Blanc full of ripe mangoes, a spicy minerality that leaves you wondering how they have captured the slate characteristic so perfectly. It is denser and more full bodied than the typical Sauvignon Blanc, a true representation of the unique terroir. I paired it with swordfish, lightly poached with a light lemon sauce, as I wanted the wine to be the superstar in this match.
