Full on plum and berry fruit, this wine with patially dried Corvina, Oseleta and Rondinella grape varieties is very fruity -- as it would be because of its appasimento style. The very ripe grapes are typically harvested in the first two weeks of October and carefully chosen grape bunches are placed just enough away from each other to avoid rot and promote airflow on straw mats. The process is called appassimento or rasinate (to dry and shrivel) and concentrates the grapes' sugars and flavours. Medium-full bodied, this wine is on the other side of dry with a rich spicy, spicecake nose and with a lovely long, concentrated berry fruit and dried herb finish. It is absolutely lovely with roast partridge or squab in a fig and moutarde de Vincenza sauce. Enjoy!
