I've tested various Ontario meads in the last two years and this one is the only one that could pass as a grape-based wine. The aromas and flavours are lighter than most meads, even other dry meads I've tasted. The aromas are similar to a Riesling: Apple, apricot, orange blossom, minerality, and a hint of almonds. The flavours are consistent with a white grape-based wine: apple and citrus with medium acidity. I would pair this with mildly seasoned fish, chicken or pork. It pairs well with a cheese plate as well.
