Not the most complex collar of foam, but a wonderful bouquet of oak, butter, toffee, tree fruit (pear, apricot), and a very nicely integrated oloroso (sherry) cask set of aromas - Reminiscent of a fine ex-sherry cask scotch.

Still in harmony on the palate with a bit of the toffee sweetness dominating the mid-palate.

Ill rate this one #2 of the 4 Innis & Gunn series, being ahead of the rum cask-finished ones and just behind the original.
