Silkscarf's Malbec Cabernet is a testatment to the winery's name -- a silkscarf of plum, prune, raisin, mocha flavours, velvety tannins and long finish -- lovely with duck or gamebirds. The wine has sat in French and American oak barrels for over 14 months and this treatment has given this red wine a perceived sweetness from the oak. The question with this wine, as with most red wines, is to decant or not to decant -- that is the question many wine lovers ask. I decant my reds because I like to bring forth the fruit flavours in a red wine, or perhaps to release some of the sulphur compounds that typically build up in reds, or simply to rest the wine and have it open up before a meal. Silkscarf suggests this wine be decanted up to four hours. For me, it's at its peak at two. However, I do run the wine through a wine aerator (Decantus Classic) beforehand which speeds up the process for impatient wine drinkers. Cheers and Enjoy!
