What a unique style of wine from an incredible Ontario winery. The grapes are kiln dried for 7 to 14 days to increase the concentration of sugar in the grape and create unique flavour compounds that you otherwise wouldn't acquire without the 'appassimento' style of drying the grapes before fermentation.
All that to say, the results are wonderful! Intense savoury notes of fresh dill, pickling spices, followed by plum, dark chocolate, leather, tobacco, underbrush, vanilla, and some dried cherry too. Light garnet in colour, this wine is sure to please. Pair with a wide variety of dishes from savoury stews, roasts with root vegetables, or even try poached salmon with fresh dill. 90 points.
