Brochet-Hervieux Cuvée Spéciale Brut Hbh Champagne 1997, A.C., Champagne, France: Vintages Wine Panel: This is a beautifully mature vintage Champagne that is showing its age gracefully. Medium gold in the glass. Complex notes of baked bread, apple, cinnamon toast, pear, vanilla bean, oatmeal muffin and beeswax on the nose. Dry, medium bodied, and with a wonderful mouth-filling texture, a refined mousse, and a zippy acidity. Buttered toast, green apple and honey delightfully pave the way for the long, layered and fresh finish. Luxurious and delicious, this bubbly begs for raw oyster (au naturel or with a dash of hot sauce and lemon). Outstanding value.
