Henry of Pelham Estate Winery Speck Family Reserve Pinot Noir 2007, VQA, Niagara Escarpment, Ontario, Canada: I don't usually recommend decanting pinot noir, but this tightly wound and complex red will benefit from an hour of breathing. Silky satin tart red cherry notes, fresh earth and mouth-watering juiciness are a great complement to many dishes from planked salmon to pate. Medium-bodied. Will age well in the cellar.
