This savoury, peppery red is a blend of shiraz and cabernet sauvignon grapes. It's full-bodied and delicious. You can't beat this price for this quality. Yum!

Food pairings: grilled red meats, hard chesses such as aged cheddar, or pasta bolognese.

2010 was a very good vintage for red varieties: hot and dry with a long growing season. The Syrah and Cabernet Sauvignon have concentrated, intense aromas and complex structure as a result. This blend of Cab Sauv and Syrah is a good example of both varieties from Niagara. The grapes were cold macerated for 48 hours before fermentation. I continued to macerate the grapes for 3 days to extract tannins and polysaccharides that help build the structure and body of the wine. Both wines underwent barrel aging for 8 months before being blended. It displays peppery notes, red currant, and plum with a nice acidity and balance on the palate. Marco Piccoli, Winemaker
