Estate grown on the south facing slopes of the Short Hills Bench Heavy clay soils translate into small berries with concentrated flavours. Yields of 2 to 3 Tonnes/acre. Food matches: Grilled salmon, crab and lobster. Wild fowl or turkey. Dishes with cream sauces or mild herb flavours. Brie-type cheeses.
