A big, black-fruited beautiful wine with deep, brooding aromas of blackberry, dark plum and black currant. Full-bodied with a towering structure. Winemaking The grapes were destemmed, but not crushed, to extract flavor as gently as possible, then transferred to small stainless steel fermenters where the juice was pumped over the skins three times a day while fermentation ran its course. At the conclusion of fermentation, the wine underwent extended maceration (24 days) and malolactic fermentation before it was aged for nearly two years in a combination of 88% new and 12% used French oak. In the spring of 2007 the wine—until then maturing in individual lots—was blended and returned to barrel before being bottled in August 2007. Winemaker Notes The 2005 Briarcrest marries suave, blockbuster structure with elegant fruit and stellar varietal appeal, making it as much a cellar selection as a natural fit for today’s table. On the nose, it pairs complex aromas of cassis, blackberry essence, violets, and lavender with powerful notes of graphite, anise, dark chocolate, cedar, espresso, toast, and tobacco, for maximum impact. On the palate, the wine delivers full fruit flavors and structured tannins before a lengthy finish, which wraps up with notes of tobacco, cassis, and toast.
