An ideal growing season for Chardonnay in the Okanagan Valley has created a pastry shop in the nose with hints of fresh bread, baked apple, nutmeg and fig. The palate rewards us with caramel, stone fruits and honey.
One of our signature techniques in the creation of our Chardonnay is the weekly batonnage we employ from December through May. Frequently disturbing the lees imparts more flavour complexity as the yeast cells break down. This gives the Chardonnay a beautifully elegant mouthfeel.
