Appassimento is a method of concentrating flavours by drying grapes, originally in Italy. It's an odd technique on a delicate wine style like rosé. However, this is tasty with fleshy ripe strawberries. A blend of Pinot Noir and unoaked Chardonnay. Pair with planked salmon.

A very flavourful rosé made from Pinot Noir and unoaked Chardonnay varietals, using the appassimento (grape-drying) method. Bright copper-pink with lovely cherry aromas and slight spicy touches. The palate gives light cherry, tropical guava, nutmeg and herbal flavours with great acidity. This will be very versatile with a wide variety of foods, from charcuterie to shrimp salad or simply as an aperitif to enjoy while the barbeque warms up. Serve well-chilled.

This wine is an Amarosé from the Niagara Peninsula in Ontario. The Foreign Affair (2016) is a rosé wine blend of Pinot Noir and Chardonnay, made in the Appassimento style. Concentrated and rich with red berry fruit and cherries, it can take on barbequed pork ribs or try it with a spicy salmon burger. - Community Wine Reviews
