Oz crafts a distinctive version of Semillon (pronounced Down Under as SEM-ill-on). Aussie winemakers impart lovely cut-hay, vanillin and floral notes to the ripe and juicy fruit by resting the wines on the lees (i.e., grape seeds, stems and yeast), with the added bonus of imparting extra texture. This one has some bottle age and is beginning to show the smoky character that comes out in mature Semillon. Enjoy it with grilled salmon steaks. Source: Vintages Wine Panel
