I'm still at a loss to explain or make notes on Honey Mead. On the nose there is definite honey and floral notes-pollen? The palate for me is a little tougher. It's light for sure, some wax and honeycomb, nectar and repeat of the floral. Not overly warm alcohol, smooth and lingering honeyed finish. For now, I'll keep trying them and save judgement for down the road.

Mead is an alcoholic beverage created by fermenting honey with water. Sometimes, fruits, grains, spices and even hops are added to the mix. Alcohol levels for mead can range from about 8% to over 20%, and mead styles can range from still, carbonated, naturally sparkling; dry, semi-sweet, or sweet. Mead Royale Honey Wine from Ontario, Rosewood 2015, is aromatic and has also seen some maturation in oak barrel giving more complexity the mead. - Community Wine Reviews
