A pretty example of the prized varietal from Rias Baixas. They chose this one instead of Verdelho or Loueiro (that would have been neat, though).
Straw - yellow. Delicate orchard fruit. Not as aromatic as one might expect from Albarino. Closed off at first, but managed to open up. Some nice cut hay aromas, after a few minutes in the glass.
Everyone at the tasting was praising Albarino's potential as a new "it" varietal, since it's easy to pronounce and easier to quaff.
Dom. Vargas wanted to give it a simple laid-bare expression by not having it go through malolactic or oaking in any way.  There was a lot of CO2 trickling out, as it was first poured. Anaerobic fermentation to preserve the vivaceous energy it typically has.
Paired with battered cuttlefish. A strawberry salad would also do great.
