Refermented from the dregs of pressed Amarone grapes comes this rich Ripasso. Full bodied and brimming with dried fruit-raisin,prune and fig. Chocolate, pepper, licorice, vanilla and oak follow. Garnet colour,smooth tannins and for 2007 it is drinking nicely now.
Serve room temperature is suggested on the bottle. Red meat and hard cheeses.
|Ripasso (or “re-passing”) involves fermenting the wine a second time on dried Amarone grapes. This process deepens the wine’s colour, body, aroma, taste and ageability. Farina’s Ripasso features aromas of pepper spice, licorice, cherries, and ginger, all contributing to a medium-bodied, long-finishing wine. Source: Vintages Wine Panel|
