All 3 varietals are hand harvested, whole bunch pressed and cold fermented. Blending is conducted post fermentation with some residual sweetness preserved to balance the acidity and provide weight, texture, and freshness. This year's blend has the addition of 10% pinot gris to accompany the 30% pinot blanc and 60% chasselas. The pinot gris has added some lovely pear notes ,which combine well with the usual fresh fruit salad aromas that this blend is famous for. With moderate alcohol and fine balance, the wine is suited for lighter pairings or a patio sipper on its own.
