Vintages Wine Panel: Brazil’s great sugar cane spirit, Cachaça, is rapidly gaining popularity, especially in the legendary cocktail, Caipirinha. This one is organic. Here’s the recipe to make the cocktail: 1 1/2 ounces (45 mL) Cachaça, 1/2 or whole lime, quartered 2 teaspoons (10+ g), heaping, superfine fruit sugar, Four ice cubes. Depending on size, use either half or a whole lime. Quarter it and put it in a cocktail shaker. Add sugar. Using a muddler (a wooden pestle or you can use a wooden spoon), mash the sugar and lime quarters together. Add Cachaça. Add ice cubes. Shake until well blended (alternatively, you can stir, but we find it doesn’t blend the sugar with the other ingredients as well). Without straining, pour all contents into a lowball glass. Enjoy. My note: I thought I’d include this lively cocktail, which makes a refreshing change from a glass wine (occasionally!).
