Ontario is making waves with its sparkling wines, and this one is another beauty. Pretty notions of tangerine, apple, pear, spring flowers, mineral and pie crust. Quite dry with a fine mousse, lots of orchard fruit, and a brilliant seam of acidity running through the middle. Culminates in a tasty pie-crust finish. Pair with anything.
