Superbly exotic and wonderful! Blends the refreshment of sparkling wine and the sweet indulgence of icewine. Serve as an aperitif before a meal, with strong flavoured appetizers such as fois gras or as a dessert all on it's own. Try it after dinner with a fruit flan and feel yourself transported. Food matches: pâté. Pair with: pâté, fresh fruit desserts.

Though a half bottle is $70, I publicly declared that this is one of the best dessert wines I have ever tried. This wine has the rare ability to make you stop what your doing and tell everyone around you to be quiet so you can enjoy the moment. The sparkling element is perfectly balanced with the icewine while not being over the top sweet. Just magical.

The Inniskillin Sparkling Icewine, with it's poached pear notes and heady spice worked in perfect harmony, with a big chuck of blue cheese, that hint of effervescence really hit my sweet spot. Can't wait to try it with fois gras!

Ripe tropical fruit aromas of lychee, apricot, pineapple, mango with some wildflower honey. The refreshing effervescence of this wine, with a touch of balanced acidity, make it able to stand up to some really powerful foods. Try it with the fattiest, creamiest, spiciest, fruitiest, or tangiest dish you can think of!

Gorgeous peach, apricot and honey aromas with lots of aromas replays on palate dominated by honey. Medium-bodied with good acidity. Silky smooth, creamy mousse on the medium-long finish. Tasted Oct/2012.

Great sparkling ice wine!Loved it! A lot of ripe fruit aromas, honey, floral, candied fruit.
Very sweet, maybe too sweet. But it was a hit with the blue cheese from La Fromagerie du Presbytère Bleu d’Élizabeth, Sainte-Élisabeth-de-Warwick, Quebec.

The 2011 Inniskillin Wines Sparkling Vidal Icewine is a medium bodied wine with intense aromas of honey, citrus and pear. It has clean, crisp acidity, fine bubbles (generated by the Charmat process), is sweet yet not syrupy and has a medium finish. It can be served with food, but ultimately why not just sip it by itself and enjoy this unique ice wine? My impression: BEAUTIFUL, 90-91 pts – as this is the only VQA approved sparkling ice wine, it retails for $79.95. Tasted Oct/12.

Now this is a celebration wine. Bubbles, Icewine … does it get more celebratory than this? Refreshing and dangerously easy to drink, this has aromas of lychee, crunchy white fruit and blonde honey while the palate is uplifting and fresh with lemon curd, passionfruit and lychee. The firm bubbles and vibrant acidity make this a nice pairing for duck confit or pâté. Tasted November 2012

This Vidal icewine went through primary fermentation using the ‘Cuvée Close’ Method, during which it was also aged on the lees. The wine was then filtered under pressure to preserve the mousse which develops during fermentation. The result is a beguiling honeyed sparkling wine with sweet floral notes, and luscious aromas of ripe pear and apricot. The fine persistent mousse, paired with tangy acidity and lush fruit, delivers finesse and balance. Just outstanding! Enjoy with paté or with fine cheeses such as Upper Canada`s Comfort Cream or Kootenay Alpine Cheese Company`s Alpindon.
This very unique wine has been crafted by using Vidal Icewine as a cuvée. Primary
fermentation occurs in a sealed vessel, which traps the naturally occurring
Aromas of nectarines and apricots dominate the nose with honey and spice
rounding out the aromatic profile. On the palate, the wine shows a very delicate
but lively effervescence which is balanced beautifully by the generous natural
acidity.
