The Chenin Blanc grape is very versatile one. It can make the most complex dessert wines to the driest still or sparkling white wine. Grown in a cool climate, it is elegant with dusty freesia, lemongrass, mineral, light herb notes and savoury flavours; in a warmer climate, the resulting wine can be full-on tropical fruit, beeswax, savoury and meaty. But the hallmark of Chenin Blanc is its ability to impart a rich honey or beeswax nose, light herbal and savoury notes and a real zippy acidity on the palate. Inniskillin’s Discovery Series Chenin Blanc is a combination of these. The wine is elegant with a pronounced nose of light honey, apple, guava, pineapple and cantaloupe flavours. On the palate, it is apple, honey, tropical fruit, savoury fresh herb. The wine is dry, powerful, well-structured and full-bodied. There is also a viscous mouth feel to the wine, bracing acidity with a long finish. We tried it with a quinoa, vegetable and Matane shrimp salad and it was a perfect complement to fresh Cobia steaks sauteed and simply finished with fresh Thai basil and a squeeze of lemon. Enjoy!
