I don't usually recommend decanting pinot noir, but this tightly wound and complex red will benefit from an hour of breathing. Silky satin tart red cherry notes, fresh earth and mouth-watering juiciness are a great complement to many dishes from planked salmon to pate. Medium-bodied. Will age well in the cellar. Pinot Noir food pairings: mushrooms, pork liver pates, tuna, grilled salmon, roasted chicken, duck and other game birds..

Harvest Date: September 24th-October 3rd, 2007
Yields of 1 ½ Tonnes / acre and below (-25 hL/ha)
Fermented in stainless steel then aged in French Oak, with 33% new.
The biggest quality factor involved in making Pinot Noir is yield in the vineyard. No short cuts to quality exist. It is not that Pinot Noir must be big, but rather that good, ageworthy and interesting Pinot Noir comes at great cost in the vineyard. Oak tank fermented.
