Black cherry-rich with lovely aromas of cranberry, redcurrant and beetroot. Silky, medium-bodied texture with a long finish. The winery hand-punched down the cap during fermentation (translation: they worked hard to make this wine). The winery used 30% new European oak to impart an enticing smoky finish. Pinot Noir food pairings: pork liver pates, tuna, grilled salmon, roasted chicken, duck and other game birds.

Made from several vineyard sites, our own estate, a neighbouring site and a vineyard located on the shore of Lake Ontario.
Harvest Date: September 21st to October 13th, 2007
Yields of 2 to 3 1/2 Tonnes/acre (~35 to 65 hL/ha)
Fermented in stainless and aged in European oak with 15% new.
