This Pastis is from Provence. Henri Bardouin made a more complex Pastis 1990, layered with 65 different spices and herbs. The base spice is star anise with liquorice, mugwort, cardamom, cloves, cinnamon, thyme, lemon verbena, St. John's wort, oregano, kidney vetch, angelica, Aframomum melegueta, commonly knows as 'grains of paradise' and a member of the ginger root family, sage, rosemary, borage, black and white pepper. Pastis was invented when the French government decided to outlaw the wormwood herb in absinthe. Pastis is normally diluted with water (or ice) and louches (turns milky white) when water is combined with the anethole and other oils in the Pastis. - Community Wine Reviews
