Cherries galore! Bright, vibrant, wake-up-your-mouth cherries dance across your palate. Bring them on! A lovely balance and nice mouth-watering acidity. Terrific finish. Top me up please. 4.5/5

Date Picked: 24th October 2007
Fruit Condition: Extremely Healthy
Handling: Hand Picked into small 25 kg picking bins allowing the fruit to arrive at the winery’s sorting table intact. Fruit was hand sorted, crushed and destemmed.
Fermentation: Fermented with wild yeast strains. Fermentation took place in small ½ tonne vats. Primary fermentation took 18 days in total. Pressed into barrel and inoculated with commercial malolactic bacteria.
Bottling date: September 8th 2008 Total Production: 68 cases
Wine analysis at bottling:
pH 3.61 T.A 7.8 g/L Alc. 12.5% alc./vol R.S <2 g/L
Cellaring potential: 5+ years
