Date Picked: 14th October 2008
Fruit Condition: Healthy, 4% Noble Rot
Handling: Gamay Noir grapes were hand picked into small 25 kg picking bins allowing the fruit to arrive at the winery’s sorting table intact. Fruit was hand sorted, crushed and destemmed. Cold soak maceration on skins for 2 days and pressed. Juice yield less than 600 litres per tonne and transferred into stainless steel fermentation tank. 36 hours of natural cold settling then racked off gross lees.
Fermentation: Fermented with commercial yeast strain. Cool fermentation began October 20/2008. The ferment was kept on lees until 27th December 2008.
Total time on primary lees: 8 weeks
Bottling date: January 14th 2009 Production: 396 cases

pH 3.33 T.A 5.63 g/L Alc. 12.7 % alc./vol R.S 15 g/L
Cellaring potential: 1-2 years
