This is how wines age gracefully and to great complexity. Leather, dried herbs and Old World maturity. Full-bodied and smooth. I’m riding into the sunset now. Finishes with vanilla spice, black plum, and cigar box. Great texture on the palate, with many layers of flavour and complexity. This Tempranillo-based blend will pair well with a variety of meat dishes.

Food pairings: cloved ham, roast lamb, traditional Spanish tapas, grilled pork.

The brown sugar coconut and dill nose leads me to believe age has taken place in American barrels. The complex nose is pronounced with added characteristics of black fruit, leather and black pepper. High acid, mellow tannin and really juicy. Wood spice, leather, dill, vanilla and blackberry follows through to the evidently aged palate. This intense wine definitely needs a complimenting food. Pairing: cured meats, pickled veg and any savoury or grilled meat. (Nov 2014)
