This is a tasty, well-balanced traditional mead (i.e. no added flavourings or fermentables other than honey). The aromas are delicate and aromatic, with orange blossom, honey, clover, dried pineapple, biscuit, and orange zest notes. It is similar on the palate, but with additional notes of yellow pear, spicy white pepper, and almond. The moderate sweetness is well balanced by the body and alcohol, though the latter brings some heat and booziness. This possibly would seem better balanced in a year or two, to give the alcohol time to integrate. Overall it is a very pleasing and reasonably complex mead. I would definitely serve this chilled, as it seems fresher and more balanced that way. Tasted Sept. 2016.
