Vintages Wine Panel: Founder Eugenio Collavini started a humble business supplying wines to local families in 1896. Today, this Friuli-based winery is known for its fine sparkling wines made from the indigenous Prosecco variety. This festive wine displays fresh notes of apple, flowers and just-baked bread, with good aroma replays on the palate and a lively finish. Have it ready and chilled for celebratory toasts. My note: A fresh, lively bubbly with just a touch of sweetness to soften it and deepen your enjoyment. Terrific aromas of ripe tree fruit and almonds. Light-bodied.
Prosecco food pairings: almonds, canapes, apricot crepese, melon balls with smoked ham.

Pale gold, small to med bubbles, the nose showing some citrus lemon, pear and an herbal/fennel note. Lightly frothy on the palate, with good acidity and repeating the citrus and asian pear fruit to a short dry-ish finish of candied lemon peel. Fairly simple and easy drinking. Serve chilled as an aperitif or with pastry based appetizers.
