Dan Akroyd Vidal Icewine Signature Reserve 2005 Wine Review
The frozen vidal grapes were harvested early in December 2005 after temperatures fell. After settling of the juice, cool fermentation was completed in mid-February when the wine was placed outdoors to stop fermentation. The wine was then transfered into small French oak barrels where it aged for a period of 12 months. Loaded with layers of apricots and honey, with a rounded oak finish. 4.4/5 Vidal Icewine Signature Reserve food pairings: foie gras, soft creamy cheese like blue and stilton, desserts, chocolates.
