Creekside Estate Winery Cabernet Sauvignon 2005 Wine Review
Made from 100% Cabernet Sauvignon havested from two vineyards in St. David's Bench appellation. The grapes udnerwent a small batch fermentation with twice daily manual punch-down of the caps. The wine was then aged in both French and American oak barrels (new and older wood) over a period of 30 months. A mocha rich red wine with dark fruit on the nose. Good grip on the palate with notes of vanilla, smoke and cassis. Full-bodied. Decant for 1-2 hours. Available at the winery. 4.4/5 Cabernet Sauvignon food pairings: grilled duck, steak, game meats, ragu, wild fowl, hard mature cheeses.
