Robust with toasty and mouth-watering white peach notes. Layered with a freshly baked bread finish. Some bright citrus notes on the mid-palate. This sparkling wine was made from 100% chardonnay grapes, with the primary ferment in stainless steel tanks and the secondary in bottle. It was then aged on the lees for 10 years for extra creaminess.

Food pairings: fresh shucked oysters with lemon, triple cream brie cheese and smoke salmon, roasted turkey with saon the mid=ge dressing.

The 2000 vintage harks back to the early days of Creekside and marks the beginning of an ongoing obsession with experimentation and curiosity. This tradition method sparkling wine was intended to be the trial run for Creekside’s sparkling wine program, but ended up being both the first and (maybe) last sparkling ever made.

Multi-layered on both the nose and palate, this wine crosses traditional toasty brioche notes with crisp citrus fruit and a deceptively explosive mousse. You don’t spend
10 years hanging out in the Creekside cellar on lees without picking up some funk, and “X” shows biscuity, bready, autolytic character in spades, but it’s complexed with the (still) youthful vigor of the Niagara Peninsula’s hallmark acidity

Crafted from 100% Chardonnay harvested from two Niagara vineyards, primary ferment was conducted in stainless steel and secondary ferment carried out in bottle. This brut style sparkling was then aged on lees for 10 long years. Disgorged in January 2010 with much excitement and applause.
