Toasty, complex fresh - no wonder Mr Bond loved this one before the says of paid product placement in movies. Great structure and balance, a silver line of acidity weaves together with the fresh white tree fruit notes baked bread with baking spices. Try this with oysters or clams.

Here it is! French Champagne with a fine, persistent mousse and a nose of apple, honey and almond. The palate gives almond, apple, lemon and croissant with a delicate apple finish. Bond with someone special and a glass of Bollinger!

The Bollinger Champagne house was founded in 1829, and now nearly two centuries later they continue to make some of the finest Champagne that's sought all over the world. The Special Cuvée is a great wine for celebrating life's moments, big, small, impromptu, there's always an occasion to enjoy a Bolly. The nose offers the first glimpse of how complex and attractive this wine is with notes of sweet biscuit, delicate orchard fruit, toasted walnut, and hay. The palate mimics the nose with refreshing minerality and baked pastries leading the long creamy and refreshing finish. Enjoy with oysters on the half shell with green apple mignonette sauce, and don't over chill this fine wine. Serve between 8-12C. 92 points. Matt Steeves - www.quercusvino.ca

This champagne takes time to open up and experimentation to find the right temperature is necessary to release its aromatics. It came across as closed when fully chilled and first opened. Leave on the counter for 20-30 minutes to take the chill off and discover new expressions with ever glass over the evening.
Bollinger is always on the robust side of the Champagne style spectrum, and this non-vintage version is a signature of the sparkling wine house. Great acidity, texture and balance. - Community Wine Reviews
