This superb blend of pinot noir, chardonnay and little pinot gris. The grapes for this wine are 100% estate-grown at Blue Mountain winery. Lovely aromas of toasty bread and cherry. Aged sur lee for 24 months in the bottle, which gives the wine an extra dimension of creaminess and a rich mousse. Incredible concentration and intensity. Look out Champagne, you’ve got a serious contender here. Canada’s best bubbly. Wow.

An almost-sweet lemon core resolves into a bone-dry, toasty finish. The big draw here is the texture, though. Its bubbly mousse is delicate and smooth rather than vigorously frothy.
