Until the final processes, Recioto is made in the identical manner as the dry-styled Amarone. This sweeter style actually predates Amarone by centuries. Reciotos use the same grapes (mostly Corvina and Rondinella) and the grapes are also mat-dried for a long period after harvest. Amarones cannot be pressed before December 1st after harvest; Reciotos not until January 1st. That extra month creates even sweeter grapes. Producers tend not to oak age the wines as it leads to an unwanted oxidative character. This richly plummy and almost chocolatey version is great on its own. Source: Vintages Wine Panel
