Waldorf My Way

serves 4

level of difficulty: easy

ingredients


1/4 C extra virgin olive oil
1/2 tsp Dijon mustard
1 tbsp red wine vinegar
2 oz. blue cheese, your choice about 1/4 cup
1/4 buttermilk
1/2 tsp fresh grated lemon zest
s and p to taste be careful here blue cheese is salty already
1 C red seedless grapes, halved
2 fuji apples, cored and sliced thin
2 ribs celery, sliced thin
1 C walnut halves, toasted
4 C of mesclun greens
2 tbsp chopped fresh parsley
2 tbsp chopped fresh tarragon
2 tbsp snipped fresh chives

instructions

In a food processor add vinegar, mustard and 1/4 cup oil. Blend in buttermilk and the blue cheese. Transfer to a bowl and add the lemon zest and season with s and p at this time. In a large bowl combine the rest of the ingredients and toss with the dressing and serve. Easy and tasty as well.
