Tiny Tim Tomato Salad With Boxwood Basil & That Dutchman’s Gouda Cheese

Serves 6
Ingredients:
3 Cups Tiny Tim Tomatoes
1 Cup That Dutchman’s Gouda (diced)
½ Cup Chiffonade Basil
3 Tbsp Balsamic Vinegar
½ Cup Olive Oil
Salt & Pepper
1 Tbsp Nova Scotia Maple Syrup
2 Tbsp Chopped Chives
6 Sprigs Boxwood Basil (garnish)

To Prepare:
1. Slice tomatoes into halves and place in a large bowl. Add diced Gouda, basil, chives and season with salt and pepper. Add maple syrup, balsamic vinegar and olive oil. Toss to combine.
2. Let marinate for 2 hours if possible.

To Plate:

Place a half cup of tomato mixture on center of plate, drizzle with dressing from bowl. Top with chopped chives and basil sprig.
