Spiced Mixed Olives with Garlic and Orange

Serves 6 as an appetizer

Level of difficulty: easy

Ingredients

1 cup green olives in brine, drained
1 cup black olives in brine, drained
1/2 red chili pepper, seeded and minced
2 cloves garlic, crushed
zest of 1 orange
1 tbsp fresh thyme, minced
1 tbsp extra-virgin olive oil

Instructions

Place all ingredients in a glass or ceramic bowl. Toss to coat olives evenly. Leave olives at room temperature for a few hours, or refrigerate overnight, to let the flavors mingle. Serve at room temperature.
