Rum Roasted Pineapple Rings

Serves 8

1 pineapple, peeled and cored and sliced into 8 equal rings
3 tbsp butter, melted
3 tbsp brown sugar
ΒΌ cup gold or dark rum
1 cup whipping cream
1 vanilla bean, split lengthwise and seeds scraped out


Preheat oven to 450F.

Combine melted butter, brown sugar and rum. Coat each of the pineapple rings.

Grease a glass baking dish or baking sheet, and roast for 15 minutes.

Meanwhile, whip cream and seeds from the vanilla bean (if you have to do it by hand with a whisk do it in advance and store in the fridge) into stiff peaks.

Flip and baste the rings with the remaining glaze. Continue to roast for 10 minutes.

Plate the pineapples with a dollop of whipped cream.
