Pumpkin Bread With Prunes And Walnuts

A healthy way to tackle a sweet craving!

Makes 10 -12 slices
Level of difficulty: moderate

1 cup canned pumpkin (not pie filling)
2/3 cup nonfat evaporated milk
1 egg
1/2 cup sugar
1 cup whole-wheat flour
1/4 cup wheat germ
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 cup pitted prunes, cut into thirds
2/3 cup chopped walnuts

Preheat oven to 350F. Spray a 9 x 5” loaf pan with non-stick cooking spray. In a large bowl, whisk together the pumpkin, evaporated milk, egg and sugar. Set aside.
In a small bowl, combine the flour, wheat germ, baking soda, salt, cinnamon and cloves. Stir into the pumpkin mixture.
Add prunes and walnuts and stir until combined.
Bake for approximately 50 minutes.
Cool for 30 minutes and then remove from loaf pan.
