Pork Chops Apple Bake

Serves 6 people


6 Loin Pork Chops
sprinkling of salt and pepper
1 tbsp oil
1/4 tsp sage
3 tart cooking apples, peeled and sliced to ~ 1/4 inch slices
1 large spanish onion, peeled and sliced paper thin
3 tbsp brown sugar
3 tbsp flour
2 cups boiling water (or a mild broth, I use mushroom bouillon)
1 tsp salt
pinch pepper
1 tbsp vinegar
1/2 cup raisins


Trim fat from chops.
Grease frying pan with the fat from the chops or with oil (you may need to use more as the chops brown).
Sprinkle sage, salt and pepper on chops. Heat pan to Medium and brown chops slowly on both sides.

Into Baking Dish: (use one with a tight top or you'll need to use foil)
Remove chops and place them in single layer in baking dish. Leave fat in frying pan. Place apple slices on the chops. Place onion slices on the apples.

Back to Frying Pan:
Make a roux with the fat that is left in the pan and the flour, cook on Low/Medium for about 2 mins. Add boiling water slowly, stirring constantly to avoid lumps. Bring to boil and thicken (like turkey gravy). Stir in the salt, pepper, vinegar and raisins. Pour over pork, apple and onion layers.

Cover the baking dish with a snug top or tightly with foil
Bake at 350 degree oven for about 75 mins or until tender.
