Papadums & Tomato Salad
Very refreshing variation from Mexican Nachos. You will find “ Papadums” in most Indian grocery’s or even on the shelves of your supermarket.
Ingredients
2 onions
6 tomatoes
1 bunch of fresh coriander
2 tbsp of fresh lemon juice
1 tbsp fresh chopped chilies
½ tsp of paprika
Salt to taste
20 Papadums
Oil for frying
Instructions
Chop onions, tomatoes and coriander.
In a large bowl, mix onions, tomatoes and coriander, please be careful not to crush tomatoes.
Add salt to taste, add lemon juice, mix well and chill in fridge.
Fry Papadums in hot oil, drain.
Sprinkle paprika over tomatoes salad and serve with Papadums on a separate plate.
Each guest, will put some salad over the Papadum just before tasting the snack.
