Goat Bolognese

1 med onion
1 green pepper
Basil leaves
1 – 1.5 lbs ground goat
*28 oz can crushed tomatoes
*14 oz can chopped tomatoes
*Garlic cloves
1 tbs Italian seasoning (or fresh basil, thyme, oregano)
Salt, Pepper and pinch of sugar, to taste

Saute the onion in dutch oven or large pot, add the green pepper and saute until soft. Add the ground goat and brown, add both cans of tomatoes (*or about 3 -4 cups of Oven Roasted Tomato Sauce Recipe that follows*). Grate the garlic on microplane grater add that and the Italian seasoning to the pot and simmer for 2-3 hours, serve over pasta.
